As we’re heading into summer, our grills are going to start getting a lot more use. Which is fantastic! Grilling is healthy and delicious!
Grilling vegetables is easy, delicious, and mess-free. These vegetable sides are a great addition to any grilled lean meat or tofu.
A great base for grilling vegetables is to toss them in olive oil, salt and pepper, and a bit of spicy seasoning. Then plop them on the grill, rotating often for even cooking.
This is a great base for eggplant, asparagus, zucchini, squash, bell pepper, jalapeno (or you're favorite spicy) peppers, tomatoes, onion, and potatoes.
Peppers are great cut in half, remove the seeds – unless you love and can handle the spice – and stuff with a mixture of soft goat cheese and top with crispy prosciutto or bacon. Pop them on the grill until the peppers are warm. It is the perfect appetizer for any summer gathering!
Potatoes are great smoked too!
Take whole potatoes and toss in olive oil, salt, and pepper add some smoking chips to your grill and toss the whole potato on the grill and close the lid. Cook on low and turn every 10 minutes. In about 45 minutes, the potatoes are perfectly cooked and quite a delicious side dish. Top however you would top a baked potato.
